The harvest of the grapes is anticipated for
preserving the acid content. It is rigorously placed
in cassettes of 20 Kgs and within 2/3 hours the
grapes are cleaned from the stalks and ready to be
pressed. The harvest of the grapes is affected with
state of the art technology, with detail given to
the maximum extraction of the primary aromas. This
happens thanks to the temperatures of the
fermentation electronically checked.
Wine is presented in naturally stabilized bottles,
after a sterilized micro filtration.

The pleasant taste, characteristic some ancient
vines makes it a great wine for sea fish,
particularly shellfish.
